Lossenny 'Serge' Ballo, head chef, invites you to see him in his artistically
designed Pangea restaurant while you watch him performing his passion
in his open kitchen. Serge hails from the Ivory Coast, but grew up in
the culinary capital of the world - Paris, where he studied for five years
and worked in famous restaurants such as Ibis Banole and La Lecorne.
Serge's lamb shank, succulent and braised to perfection
with chilli ginger and accompanied by chick peas and cous-cous as a main
course is scintillating. Serge brings the flair of 'Gay Paris' and taste
of home-Africa, to conjure up unique and inspiring dishes.
